Mac & Cheese with Tomatoes, Feta & Spinach
Mac & Cheese with Tomatoes, Feta & Spinach is a meal you can toss together in record time and you can be sure the kids are going to love the colors and textures in this delicious dish!
Robyn used fire-roasted tomatoes in this recipe to give it a little extra kick in the flavor department but regular tomatoes will work just fine as well. The feta is a perfect complement to the cheddar cheese and the addition of spinach will add those extra nutrients for growing kids.
While your Mac & Cheese is cooking, simply saute the garlic and onions and add the tomatoes and spinach. Toss your pasta with it all and dinner is served. Easy Peasy and Super Cheesy!
