Our recipe creator, Robyn from Simply Fresh Dinners has combined some of her favorite ingredients with our new Mac & Cheese to bring you a quick and easy solution to busy weeknight dinners.

Mac & Cheese with Tomatoes, Feta & Spinach | Chickapea Pasta

Robyn used fire-roasted tomatoes in this recipe to give it a little extra kick in the flavor department but regular tomatoes will work just fine as well.  The feta is a perfect complement to the cheddar cheese and the addition of spinach will add those extra nutrients for growing kids.

While your Mac & Cheese is cooking, simply saute the garlic and onions and add the tomatoes and spinach.  Toss your pasta with it all and dinner is served.  Easy Peasy and Super Cheesy!

Ingredients
  • 16 ounces Chickapea Mac & Cheese
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • pinch of salt
  • 2 cloves garlic, minced
  • 14 ounce can of fire-roasted tomatoes (or regular tomatoes)
  • 1/2 teaspoon Italian seasoning
  • 8 ounces fresh baby spinach
  • 1/2 cup feta cheese, crumbled
  • salt and freshly ground pepper to taste
  • parsley to garnish
Instructions
  1. Cook Chickapea Mac and Cheese according to directions

  2. Heat olive oil in a large pan over medium-high heat. 
  3. Add onions and garlic and pinch of salt; cook for 2 to 3 minutes, or until softened.

  4. Stir in tomatoes and talian seasoning and continue to cook for 5 minutes. Add spinach and cook for one minute..

  5. Add Mac & Cheese to the tomato mixture and combine.

    Garnish with parsley and serve immediately.
