Creamy Avocado Chickapea

Simple, fresh, creamy, nutritious and ready in minutes! Adding avocado is a great (and really deliciously simple) way to add some healthy fat and extra vitamins to your Chickapea Pasta! This one is sure to please!
Creamy Avocado Pasta
- 1 227 g package of Chickapea Pasta in Spiral or Penne
- Flesh of 2 ripe avocados
- 1/2 cup fresh basil
- 2 cloves garlic
- 2 tablespoons fresh lemon juice
- 1/3 cup olive oil
- 1 cup cherry tomatoes halved
- 1/2 cup fresh or frozen corn kernels
- Salt and pepper to taste
Cook pasta according to package instructions; drain well.
Toast corn in a dry pan over medium heat until lightly browned.
Combine avocados, basil, garlic, lemon juice, salt and pepper in a food processor or high speed blender. Pour in olive oil until desired consistency is reached.
In a large bowl, combine pasta, avocado sauce, cherry tomatoes and corn. Garnish with fresh basil.
