16 Jan Buffalo Chicken Mac & Cheese
Picking up a rotisserie chicken on the way home makes this one of the easiest dinners you’ll make. Let’s keep dinner simple and healthy when life is so busy!
Our recipe creator, Robyn from Simply Fresh Dinners is having fun in her kitchen creating new Mac & Cheese recipes and this Buffalo Chicken Mac & Cheese is sure to please the whole family.
You can also use up leftover chicken and use your favorites to top it – feta, goat or blue cheese would all be delicious. Robyn loves to toss some green onions on lots of her dishes to give it that little extra bite.
Serving this meal in a roasted pepper will add color and fun to your plate and of course, lots of extra nutrients. For vegetarians, leave out the chicken and enjoy Chickapea’s new Mac & Cheese straight up!

- 1 cup cooked chicken, cubed
- 1/2 cup your favorite hot sauce
- 1 cup blue cheese or feta
- 3 green onions, chopped
Cook Chickapea Mac and Cheese according to directions.
While pasta is cooking, mix chicken and hot sauce in a small bowl, coating the chicken. Heat in pan or microwave - about 2 minutes.
Add chicken to cooked Mac and cheese, stirring well to combine. Serve topped with cheese and green onions.
