You can also use up leftover chicken and use your favorites to top it – feta, goat or blue cheese would all be delicious.  Robyn loves to toss some green onions on lots of her dishes to give it that little extra bite.

Ingredients
  • 12 ounces Chickapea Mac & Cheese
  • 1 cup cooked chicken, cubed
  • 1/2 cup your favorite hot sauce
  • 1 cup blue cheese or feta
  • 3 green onions, chopped
Instructions
  1. Cook Chickapea Mac and Cheese according to directions.

  2. While pasta is cooking, mix chicken and hot sauce in a small bowl, coating the chicken.  Heat in pan or microwave - about 2 minutes.

  3. Add chicken to cooked Mac and cheese, stirring well to combine. Serve topped with cheese and green onions.
