25 May Easy Peasy Cheesy Bake
I had never heard of a pasta bake before becoming a mom. A friend enlightened me one night as I watched her toddler scarf down this scrumptious veggie-packed meal. This dish is so easy! You can use whatever veggies you have on hand and you don’t even have to cook the pasta first! Just toss everything into one pot and forget about it until dinner time!
- 1 batch Marinara Sauce or two jars of your favourite store brand
- 4 cups chopped veggies mushrooms, spinach, zucchini, peppers, ect.
- 2 cups grated cheese or Daiya
- 1 package Chickapea Pasta
Prepare Marinara Sauce
Preheat Oven to 400F
Sautee veggies in olive oil until soft
Add cooked Chickapea pasta to large baking dish or dutch oven, along with sauce and veggies. Mix well.`
Mix in 1 cup of the cheese, and top with the other half.
Cover and bake for 50 minutes. Remove lid and bake for 10 minutes to brown the cheese on top.
