The Canadian Celiac Association‘s website has a wealth of information for people with celiac disease from eating out, medical information, resources and amazing product information. They state that although statistics aren’t readily available, it’s estimated 1 in 133 people in Canada are affected by celiac disease.
CCA outlines celiac disease as the following:
“Celiac disease is a medical condition in which the absorptive surface of the small intestine is damaged by a substance called gluten. This results in an inability of the body to absorb nutrients: protein, fat, carbohydrates, vitamins and minerals, which are necessary for good health.
A wide range of symptoms may be present. Symptoms may appear together or singularly in children or adults. In general, the symptoms of untreated celiac disease indicate the presence of malabsorption due to the damaged small intestine.
Gluten is a protein found in wheat, rye, triticale, barley. In the case of wheat, gliadin has been isolated as the toxic fraction. It is the gluten in the flour that helps bread and other baked goods bind and prevents crumbling. This feature has made gluten widely used in the production of many processed and packaged foods.”

The American Celiac Disease Foundation is an excellent resource with a wealth of information on healthy eating plans for people with living with celiac disease including babies and young children with dedicated meal plans for celiac Diabetics.

Just a note: please ensure you are always verifying ingredients if you’re unsure of their contents, sometimes gluten is hidden in places you least expect it!
Lindsay from Cotter Crunch writes and develops healthy gluten-free recipes that make your mouth water. It’s the perfect place to start and browse gluten-free ideas. Contrary to those who say “Ugh it’s gluten-free!”, you know them! We have ALL heard that one time or another. This site will squash every one of those comments. Gluten-free is delicious!
